3-Ingredient Basic Cheese Dip

This is one of those recipes that’s wicked simple but tastes way better than the processed stuff. Real cheese, half and half, and a bit of cornstarch – that’s it.

Ingredients

Ingredients (~12 servings)

  • 1 1/2 cups half and half
  • 1 1/2 Tbsp cornstarch
  • 12 oz medium cheddar cheese shredded

Instructions

  • Whisk half and half and cornstarch in a medium saucepan until smooth with no lumps.
  • Heat over medium-high, stirring constantly, until it just starts bubbling around the edges, about 1 minute.
  • Reduce heat to low and simmer for 30 seconds while stirring, then remove from heat.
  • Immediately stir in shredded cheddar cheese.
  • Return pan to low heat and stir until cheese is completely melted and smooth, 2-3 minutes.
  • Add a splash more half and half if the mixture is too thick.
  • Serve warm with tortilla chips.

Notes

Queso thickens as it cools; keep warm in a slow cooker on warm setting for parties.
