3-Ingredient Basic Cheese Dip
This is one of those recipes that’s wicked simple but tastes way better than the processed stuff. Real cheese, half and half, and a bit of cornstarch – that’s it.

cups
half and half

1 1/2
Tbsp
cornstarch
▢
12
oz
medium cheddar cheese
shredded
Instructions
Whisk half and half and cornstarch in a medium saucepan until smooth with no lumps.
Heat over medium-high, stirring constantly, until it just starts bubbling around the edges, about 1 minute.
Reduce heat to low and simmer for 30 seconds while stirring, then remove from heat.
Immediately stir in shredded cheddar cheese.
Return pan to low heat and stir until cheese is completely melted and smooth, 2-3 minutes.
Add a splash more half and half if the mixture is too thick.
Serve warm with tortilla chips.
Notes
Queso thickens as it cools; keep warm in a slow cooker on warm setting for parties.
