Caramelized Onion Dip
I grew up on the boxed stuff but this version is wicked simple and tastes way better. Takes about 45 minutes but most of that is just waiting for the onions to do their thing.

Ingredients

olive oil

salted butter

large yellow onions
thinly sliced
▢

large shallots
thinly sliced

soy sauce
▢

sour cream

minced dehydrated onion

mayonnaise

minced dehydrated garlic

umami seasoning

Worcestershire sauce

Dijon mustard

minced fresh chives

Salt and freshly ground pepper to taste
Instructions
Heat butter and olive oil in a large skillet over medium-low heat.
Add sliced onions and shallots, season with salt and pepper.
Cook stirring occasionally for about 10 minutes until soft and translucent.
Add soy sauce and continue cooking, stirring every few minutes.
Cook for 25-30 minutes total until deeply golden brown and sweet-smelling.
Remove from heat and cool completely to room temperature.
Roughly chop the cooled caramelized onions.
Combine chopped onions with sour cream, mayo, dehydrated onion, dehydrated garlic, umami seasoning, Worcestershire, and Dijon mustard in a large bowl.
Mix well and fold in fresh chives.
Taste and season with salt and pepper as needed.
Cover and refrigerate for at least 4 hours before serving.
Notes
Make the day before serving for best flavor development.
