Cauliflower Salad
This is basically broccoli salad but with cauliflower - it's got that same creamy, bacon-studded vibe that makes it disappear at potlucks. The sweet dressing balances out the sharp cheddar perfectly.

Ingredients
Ingredients (~6 servings)

large head cauliflower
~6 cups, cut into bite-sized florets

mayonnaise
▢
2/3
cup
sour cream
good quality and thick, like Daisy brand
▢
1/3
cup
sugar
▢
1/2
tsp
salt
▢

cup
shredded sharp cheddar cheese
▢

slices bacon
~5 oz
Instructions
Cook bacon pieces in a large skillet over medium heat until crisp, about 8-10 minutes.
Drain bacon on a paper towel lined plate.
Whisk mayonnaise, sour cream, sugar, and salt together in a small bowl until smooth.
Place cauliflower florets in a large bowl.
Add dressing and toss until all florets are coated.
Sprinkle cheese and crumbled bacon over cauliflower and fold together until combined.
Serve immediately or chill up to 2 hours before serving.
Notes
Sugar may clump initially but will dissolve as you whisk.
