Chicken Parmesan Casserole

This is essentially chicken parm in casserole form - all the flavors you want without having to bread and fry individual pieces. The frozen popcorn chicken saves you time and still gives you that crispy texture.

Ingredients

Ingredients (~6 servings)

  • 1 lb frozen popcorn chicken
  • 12 oz pasta penne or rigatoni work well
  • 1 jar marinara sauce 24 oz
  • 1 1/2 cups shredded mozzarella cheese
  • 3/4 cup parmesan cheese
  • 2 Tbsp fresh basil chopped

Instructions

  • Preheat oven to 375F and spray 9x13 dish with cooking spray.
  • Boil pasta in salted water until just before al dente, about 1-2 minutes less than package instructions.
  • Drain pasta and mix with frozen popcorn chicken, marinara sauce, 3/4 cup parmesan, and 1 cup mozzarella.
  • Transfer mixture to prepared dish and top with remaining 1/2 cup mozzarella.
  • Bake 50-60 minutes until sauce bubbles and cheese turns golden brown.
  • Let cool 10-15 minutes before serving.
  • Garnish with fresh basil and extra parmesan if desired.

Notes

Popcorn chicken remains crispy on top layer of casserole.
