Chocolate Brownie Mint Sandwiches

These are basically brownies shaped like cookies with mint buttercream in the middle. They're rich as hell but perfect for the holidays when you want something that looks fancy but uses simple ingredients.

Ingredients

~18 sandwich cookies

  • 18 oz dark chocolate divided, finely chopped
  • 6 Tbsp unsalted butter
  • 3 eggs at room temperature
  • 1 cup + 2 Tbsp granulated sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter at room temperature
  • 1 1/2 cups confectioners' sugar
  • 1/4 tsp mint extract
  • Candy canes crushed

Instructions

  • Melt 9 oz chocolate and 6 Tbsp butter in microwave, cool to room temperature.
  • Beat eggs, sugar, and vanilla until light and foamy, about 5 minutes.
  • Mix in cooled chocolate, then fold in flour mixture and remaining chocolate.
  • Let batter rest 10 minutes.
  • Scoop dough onto parchment-lined sheets, refrigerate 30 minutes.
  • Preheat oven to 350F.
  • Bake cookies 8 minutes until tops crack.
  • Cool completely.
  • Cream butter and confectioners' sugar, add mint extract.
  • Sandwich cookies with buttercream.
  • Dip edges in crushed candy canes.
  • Refrigerate before serving.

Notes

Cookies improve after sitting for a few hours.
