Chocolate Dipped Soft Ginger Cookies

These are soft spiced cookies with a chocolate coating - perfect for when you want something warm and cozy but also a bit indulgent.

Ingredients

~18 cookies

  • 2 2/3 cups all-purpose flour
  • 1 3/4 tsp baking soda
  • 3/4 tsp Diamond Crystal kosher salt
  • 1/3 cup cocoa powder
  • 1 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 3/4 tsp ground cloves
  • 3/4 cup unsalted butter room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/3 cup molasses
  • 1 large egg
  • 3/4 cup semi-sweet chocolate chips
  • 3 tbsp unsalted butter
  • 1 1/2 tbsp whole milk
  • 3/4 cup granulated sugar for rolling

Instructions

  • Whisk flour, baking soda, salt, cocoa, ginger, cinnamon, and cloves in a medium bowl.
  • Cream butter and sugars in stand mixer until light and fluffy, about 3-4 minutes.
  • Add molasses and egg, beat until smooth.
  • Gradually mix in flour mixture on low speed in three additions.
  • Refrigerate dough for 30 minutes.
  • Preheat oven to 350F and line baking sheets with parchment.
  • Roll dough into 1 tablespoon balls, coat in granulated sugar.
  • Place balls 2 inches apart on baking sheets.
  • Bake 10 minutes until set but soft.
  • Cool on sheet 5 minutes, then flatten with spatula.
  • Transfer to wire rack to cool completely.
  • Melt chocolate chips, butter, and milk in saucepan over medium heat, stirring continuously.
  • Dip cooled cookies halfway in melted chocolate.
  • Let chocolate set at room temperature or chill 5 minutes.

Notes

Cookies stay fresh in airtight container for 5 days.
