Chocolate Dipped Soft Ginger Cookies
These are soft spiced cookies with a chocolate coating - perfect for when you want something warm and cozy but also a bit indulgent.

Ingredients

Instructions
Whisk flour, baking soda, salt, cocoa, ginger, cinnamon, and cloves in a medium bowl.
Cream butter and sugars in stand mixer until light and fluffy, about 3-4 minutes.
Add molasses and egg, beat until smooth.
Gradually mix in flour mixture on low speed in three additions.
Refrigerate dough for 30 minutes.
Preheat oven to 350F and line baking sheets with parchment.
Roll dough into 1 tablespoon balls, coat in granulated sugar.
Place balls 2 inches apart on baking sheets.
Bake 10 minutes until set but soft.
Cool on sheet 5 minutes, then flatten with spatula.
Transfer to wire rack to cool completely.
Melt chocolate chips, butter, and milk in saucepan over medium heat, stirring continuously.
Dip cooled cookies halfway in melted chocolate.
Let chocolate set at room temperature or chill 5 minutes.
Notes
Cookies stay fresh in airtight container for 5 days.
