Coffee Cake Cookies

These cookies take the best parts of a classic coffee cake - the soft, buttery cake and the crunchy cinnamon streusel - and pack them into a single cookie. The recipe involves making a baked cinnamon crumb first, which is then mixed into and sprinkled on top of a brown sugar cookie dough. A simple vanilla glaze finishes them off. This recipe makes about 18-20 cookies.

  • Scoop 2-tablespoon dough balls onto parchment-lined sheet.
  • Sprinkle tops with some remaining crumbs, reserving some for later.
  • Freeze dough balls 20-30 minutes until solid.
  • Place frozen balls 2-3 inches apart on lined baking sheet.

Notes

Ensure crumbs are broken small for proper cookie spread. Chilling dough ensures thick, chewy cookies.
