Creamy Chicken Potato Soup

I grew up on this meal - it's cheap, flavorful and filling. All you need is some basic vegetables, chicken, and potatoes in a creamy broth that comes together in about 45 minutes.

Ingredients

Ingredients (~6 servings)

  • 2 Tbsp olive oil
  • 1 1/2 lbs chicken breast or thighs cut into bite-sized pieces
  • 1 Tbsp garlic powder
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tsp dried thyme
  • 1 large onion diced
  • 3 large carrots diced
  • 4 stalks celery diced
  • 2 lbs Yukon gold potatoes peeled and cubed
  • 1/3 cup all-purpose flour
  • 6 cups chicken broth
  • 3 cups whole milk

Instructions

  • Heat olive oil in large pot over medium heat.
  • Add carrots, celery, and onions; cook 6-8 minutes until softened.
  • Stir in garlic powder, salt, pepper, thyme, and flour; cook 1-2 minutes.
  • Add chicken broth and milk, stirring to combine.
  • Add potatoes and chicken pieces.
  • Bring to boil, then reduce to simmer.
  • Cook 20-25 minutes until potatoes are tender and chicken reaches 165F.
  • Season to taste with salt and pepper.

Notes

Serve hot. Soup will continue to thicken as it cools.
