Creamy Lasagna Soup

If you like lasagna but want a quicker, one-pot version, this soup is a good alternative. It has all the same components - savory meat, a rich tomato-cream broth, and cheesy toppings - but comes together in about 30 minutes.

Ingredients

  • 1 lb ground Italian sausage or ground beef
  • 1 small onion finely diced
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 cups tomato sauce or marinara
  • 4 cups beef or vegetable broth
  • 2 cups water
  • 1 cup heavy cream
  • 10 lasagna noodles broken into bite-sized pieces
  • 4 cups fresh spinach roughly chopped
  • 1 cup mozzarella cheese grated
  • Diamond Crystal kosher salt and black pepper to taste
  • Ricotta cheese for garnish

Instructions

  • Brown Italian sausage in large pot over medium-high heat, breaking apart while cooking.
  • Drain excess grease, reduce heat to medium and cook onions 3-4 minutes.
  • Add garlic, cook 1 minute.
  • Stir in tomato paste, cook 2-3 minutes.
  • Add beef broth, tomato sauce, water, and heavy cream.
  • Add broken lasagna noodles, bring to simmer.
  • Cover and cook 10-12 minutes until noodles are al dente, stirring occasionally.
  • Stir in spinach and mozzarella, cook 2-3 minutes until spinach wilts and cheese melts.
  • Top with ricotta and serve hot.

Notes

Stir soup regularly to prevent noodles from sticking to pot bottom.
