Creamy Lasagna Soup
If you like lasagna but want a quicker, one-pot version, this soup is a good alternative. It has all the same components - savory meat, a rich tomato-cream broth, and cheesy toppings - but comes together in about 30 minutes.

Instructions
Brown Italian sausage in large pot over medium-high heat, breaking apart while cooking.
Drain excess grease, reduce heat to medium and cook onions 3-4 minutes.
Add garlic, cook 1 minute.
Stir in tomato paste, cook 2-3 minutes.
Add beef broth, tomato sauce, water, and heavy cream.
Add broken lasagna noodles, bring to simmer.
Cover and cook 10-12 minutes until noodles are al dente, stirring occasionally.
Stir in spinach and mozzarella, cook 2-3 minutes until spinach wilts and cheese melts.
Top with ricotta and serve hot.
Notes
Stir soup regularly to prevent noodles from sticking to pot bottom.
