Ingredients

vegetable oil

plain yogurt or sour cream
Instructions
Preheat oven to 350F. Grease 9x5 inch loaf pan and line with parchment paper, leaving overhang.
Whisk flour, sugar, baking powder, salt, and lemon zest in large bowl.
Make well in center, add eggs, oil, melted butter, and vanilla.
Mix until smooth, then fold in yogurt until just combined.
Pour batter into pan and smooth top.
Bake 50-55 minutes until golden and skewer comes out clean.
Cool in pan 15 minutes, then remove to wire rack and cool completely before slicing.
Notes
Use sour cream as alternative to yogurt. Batter will be thick.
