Everyday Cake

This is a simple, one-bowl loaf cake that's moist and dense. The combination of oil and yogurt keeps it from drying out for several days. It's a straightforward recipe for a basic, reliable cake.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • Zest of 1/2 lemon
  • 3 large eggs
  • 3 tablespoons vegetable oil
  • 7 tablespoons unsalted butter melted
  • 2 teaspoons vanilla extract
  • 1/2 cup plain yogurt or sour cream

Instructions

  • Preheat oven to 350F. Grease 9x5 inch loaf pan and line with parchment paper, leaving overhang.
  • Whisk flour, sugar, baking powder, salt, and lemon zest in large bowl.
  • Make well in center, add eggs, oil, melted butter, and vanilla.
  • Mix until smooth, then fold in yogurt until just combined.
  • Pour batter into pan and smooth top.
  • Bake 50-55 minutes until golden and skewer comes out clean.
  • Cool in pan 15 minutes, then remove to wire rack and cool completely before slicing.

Notes

Use sour cream as alternative to yogurt. Batter will be thick.
