Frosted Sugar Cookie Bars
This is a straightforward way to get the flavor of frosted sugar cookies without having to roll, cut, and decorate individual cookies. The base is a simple, soft sugar cookie dough pressed into a pan, and it's topped with an easy buttercream.

Ingredients
For the Sugar Cookie Base

all-purpose flour

granulated sugar

For the Frosting
▢

cup
plus 1 tbsp unsalted butter
softened
▢
A pinch of fine salt
▢

vanilla extract

powdered sugar
Instructions
Preheat oven to 350°F. Grease 9x13-inch pan and line with parchment paper, leaving overhang.
Whisk flour, baking soda, baking powder, and salt in medium bowl.
Cream butter and sugar until light. Beat in vanilla and eggs until smooth.
Mix in half the dry ingredients, then fold in remainder until just combined.
Press dough evenly into prepared pan.
Bake 18-22 minutes until edges are lightly browned and middle is set.
Cool completely on wire rack.
Beat butter, salt, and vanilla until light for frosting.
Add powdered sugar and beat until fluffy.
Spread frosting over cooled cookie base.
Refrigerate 30 minutes until frosting sets.
Lift using parchment and cut into squares.
Notes
Ensure cookie base is completely cool before frosting to prevent melting.
