Irish Mashed Potatoes (Colcannon)
This recipe uses up leftover kale and turns regular mashed potatoes into something that feels like a complete meal.

Ingredients

medium russet potatoes
peeled

unsalted butter

green onions
sliced in 1/4 inch pieces

kale
cut in small pieces

heavy whipping cream

Instructions
Peel and cut potatoes into eighths, place in cold salted water, cover, and bring to a boil.
Reduce heat and simmer until fork tender, about 15 minutes.
Drain potatoes well and place in stand mixer bowl.
Whip with paddle attachment until fairly smooth.
Melt butter in a skillet over medium heat, add kale, and cook about 5 minutes.
Add green onions and cook about 2 minutes.
Reduce heat to medium-low, pour in cream, and heat through until steaming.
Add cream mixture to whipped potatoes along with white pepper, garlic powder, and salt.
Stir until well combined and transfer to serving bowl.
Serve warm with a pat of butter melted in the center of each mound.
Notes
Do not add ingredients while whipping potatoes or they will become gluey. Add more cream if mixture seems too thick.
