Old-Fashioned Peanut Butter Cookies
Most peanut butter cookies are either too dry or too cakey. This recipe gives you a cookie that's crispy on the edges, chewy in the center, and melts in your mouth. The dough comes together in minutes and doesn't require any chilling.

Ingredients

1 stick, softened

granulated sugar

smooth peanut butter
Instructions
Preheat oven to 350F and line baking sheet with parchment paper.
Whisk flour, baking soda, and salt in medium bowl.
Beat butter and both sugars in stand mixer until combined, then add egg and vanilla until light and creamy.
Mix in peanut butter on low speed until just incorporated.
Add flour mixture gradually, mixing only until combined.
Roll dough into tablespoon-sized balls and place 2 inches apart on baking sheet.
Create crisscross pattern on each cookie using sugar-dipped fork.
Bake 10 minutes until edges are golden and centers are matte.
Cool on baking sheet 5 minutes, then transfer to wire rack.
Notes
Do not overmix dough when adding dry ingredients.
