Sour Cream and Onion Mashed Potatoes
These taste like your favorite potato chip in the best way possible. The dried onion infuses into the cream while the potatoes cook – so you get onion flavor without any crunch.

Ingredients
Ingredients (~12 servings)

~4 1/2 lbs Yukon gold potatoes
▢

garlic cloves
grated

heavy cream
▢

salted butter
▢

sour cream
room temperature

dried minced onion

thinly sliced green onions
dark green parts

minced fresh chives

Kosher salt & freshly cracked pepper
Instructions
Cut potatoes into equal chunks and place in a large pot covered with cold salted water by 2 inches.
Bring to a simmer over medium heat and cook until very tender, about 20-25 minutes.
While potatoes cook, combine heavy cream, butter, grated garlic, and dried minced onion in a small saucepan.
Warm the cream mixture over low heat for about 10 minutes until hot but not simmering.
Drain potatoes and return to the same pot.
Lightly mash potatoes, then slowly add the warm cream mixture while continuing to mash.
Add sour cream and mash to desired consistency.
Fold in green onions and chives.
Season with salt and pepper to taste.
Serve immediately while hot.
Notes
Potatoes can be peeled or left unpeeled; these do not hold well once they start cooling down.
