Taco Soup With Ground Beef

This is pure Midwest comfort food - it's basically everything good from a taco thrown into a pot. Takes about 30 minutes and uses stuff most people already have.

Ingredients

Ingredients (~8 servings)

  • 2 lbs ground beef
  • 1 large onion ~2 cups, diced
  • 3 cups water
  • 2 cans kidney beans undrained
  • 2 cans diced tomatoes undrained
  • 1 can corn undrained
  • 1 can diced green chiles undrained
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • Shredded cheese sour cream, diced avocado, cilantro, and tortilla chips for serving

Instructions

  • Brown ground beef and onions in large pot over medium-high heat for 5-6 minutes, draining excess fat.
  • Add water, kidney beans, tomatoes, corn, green chiles, taco seasoning, and ranch mix.
  • Bring to boil, then simmer for 20 minutes until flavors combine.
  • Serve with shredded cheese, sour cream, diced avocado, cilantro, and tortilla chips.

Notes

Cheese will melt into hot soup; toppings balance spice from chiles.
