Berry Fruit Salad with Honey Balsamic Dressing

Ingredients (~8 servings)

  • 3 Tbsp balsamic vinegar
  • 3 Tbsp granulated sugar
  • 3 Tbsp honey
  • ~1 1/2 lbs fresh strawberries, halved
  • ~1 lb fresh blueberries
  • 1/2 lb fresh raspberries
  • 1/2 lb fresh blackberries
  • Fresh mint for garnish (optional)

Make the Honey Balsamic Dressing

In a small mixing bowl whisk together the balsamic vinegar and sugar until the sugar is mostly dissolved.

The sugar might not completely dissolve at first but will finish dissolving once it sits with the fruit.

Whisk in the honey until well combined.

Combine the Fruit and Dressing

Add the strawberries, blueberries, and blackberries to a large serving bowl.

Pour the dressing over the fruit and toss gently to coat everything.

Add the raspberries last and give it one more gentle toss – raspberries break apart easily so you want to handle them as little as possible.

Let the Flavors Develop

Let the fruit salad rest in the refrigerator for ~15-20 minutes before serving.

This gives the fruit time to release some juices and the dressing to fully coat everything.

Garnish with fresh mint leaves if using and serve chilled.

Notes

Sugar will fully dissolve as it sits with the fruit; handle raspberries minimally to prevent breaking.
