Cinnamon Sugar Cookies

If you like the gooey inside of a cinnamon roll, make these cookies. They're soft, chewy, and use dark brown sugar for a richer molasses flavor. The dough needs to be chilled, and it bakes well from frozen.

Ingredients

Ingredients (~18 cookies)

  • 1 3/4 cups dark brown sugar
  • 3/4 cup unsalted butter softened
  • 1 large egg
  • 2 3/4 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 3/4 tsp kosher salt
  • 2 3/4 tsp ground cinnamon

Instructions

  • Whisk together flour, baking powder, salt, and cinnamon in a medium bowl.
  • Cream softened butter and dark brown sugar in stand mixer until paste forms.
  • Beat in egg and vanilla extract until combined.
  • Add dry ingredients to wet in three additions, mixing on low until just combined.
  • Scoop 1/4 cup dough balls onto parchment-lined sheet.
  • Chill dough balls for 2 hours or freeze until solid.
  • Preheat oven to 350F.
  • Place chilled dough balls on parchment-lined cookie sheet.
  • Bake 17-20 minutes until edges are golden and centers are matte.
  • Cool cookies on baking sheet.

Notes

Chilling dough is essential for chewy texture and prevents spreading.
