Cinnamon Sugar Cookies
If you like the gooey inside of a cinnamon roll, make these cookies. They're soft, chewy, and use dark brown sugar for a richer molasses flavor. The dough needs to be chilled, and it bakes well from frozen.

Ingredients

dark brown sugar

softened

vanilla extract

Instructions
Whisk together flour, baking powder, salt, and cinnamon in a medium bowl.
Cream softened butter and dark brown sugar in stand mixer until paste forms.
Beat in egg and vanilla extract until combined.
Add dry ingredients to wet in three additions, mixing on low until just combined.
Scoop 1/4 cup dough balls onto parchment-lined sheet.
Chill dough balls for 2 hours or freeze until solid.
Preheat oven to 350F.
Place chilled dough balls on parchment-lined cookie sheet.
Bake 17-20 minutes until edges are golden and centers are matte.
Cool cookies on baking sheet.
Notes
Chilling dough is essential for chewy texture and prevents spreading.
