Classic Banana Bread
This banana bread gets its moist, soft crumb from using both melted butter and very ripe bananas. A small amount of cinnamon adds warmth without overpowering the banana flavor, and a split banana on top caramelizes during baking.

Ingredients

medium ripe bananas

unsalted butter
1 1/2 sticks, melted

light brown sugar

Instructions
Preheat oven to 350°F and grease a 9x5 inch loaf pan.
Whisk together flour, baking soda, baking powder, salt, and cinnamon in a medium bowl.
Mash 3 bananas in a large bowl until mostly smooth with some lumps.
Mix mashed bananas with melted butter, granulated sugar, and brown sugar until combined.
Whisk in vanilla and eggs one at a time.
Fold dry ingredients into wet ingredients until just combined.
Pour batter into pan and tap to level.
Split remaining banana lengthwise, place on top of batter, and sprinkle with 1 tbsp brown sugar.
Bake 55-65 minutes until golden and toothpick comes out mostly clean.
Cool in pan 20 minutes, then remove to wire rack until completely cooled.
Notes
Do not overmix batter. Bread should be completely cool before slicing.
