Spicy Boiled Peanut Hummus
This is a southern twist on regular hummus that uses spicy boiled peanuts instead of chickpeas. It's great with sweet potato chips or as a sandwich spread.

Ingredients

2 1/4
cups
shelled spicy boiled peanuts
▢
3
Tbsp
tahini
▢
2
Tbsp
lemon juice
▢
3
Tbsp
peanut oil
▢
3-6 Tbsp water or cooking liquid from boiled peanuts
Instructions
Add boiled peanuts, tahini, lemon juice, and peanut oil to food processor.
Pulse until mixture begins to break down and become smooth.
With processor running, add water or cooking liquid 1 tablespoon at a time until spreadable.
Taste and adjust seasoning with additional lemon juice or salt if needed.
Notes
Use cooking liquid from boiled peanuts for extra flavor if available.
