Spicy Boiled Peanut Hummus

Ingredients (~12 servings)

  • 2 1/4 cups shelled spicy boiled peanuts
  • 3 Tbsp tahini
  • 2 Tbsp lemon juice
  • 3 Tbsp peanut oil
  • 3-6 Tbsp water or cooking liquid from boiled peanuts

 

Combine Ingredients in Food Processor

Add the boiled peanuts, tahini, lemon juice, and peanut oil to your food processor.

Process in pulses until the mixture starts to break down and become smooth.

The peanuts will be chunkier than chickpeas at first but keep pulsing – they’ll smooth out.

Add Liquid Until You Reach the Right Consistency

With the processor running, add the water or boiled peanut cooking liquid 1 tablespoon at a time.

The cooking liquid from the peanuts will give you more flavor than plain water if you have it.

Stop when it reaches your preferred consistency – it should be spreadable but not runny.

Taste and add more lemon juice if you want it brighter, or a pinch of salt if the peanuts weren’t salty enough.

Spicy Boiled Peanut Hummus

This is a southern twist on regular hummus that uses spicy boiled peanuts instead of chickpeas. It’s great with sweet potato chips or as a sandwich spread.

  • Pulse until mixture begins to break down and become smooth.
  • With processor running, add water or cooking liquid 1 tablespoon at a time until spreadable.
  • Taste and adjust seasoning with additional lemon juice or salt if needed.

Notes

Use cooking liquid from boiled peanuts for extra flavor if available.
