Ingredients
- 1 3/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
- Zest of 1/2 lemon
- 3 large eggs
- 3 tablespoons vegetable oil
- 7 tablespoons unsalted butter, melted
- 2 teaspoons vanilla extract
- 1/2 cup plain yogurt or sour cream
Prepare the Batter
Preheat your oven to 350°F (or 325°F if using a convection oven).
Prep a 9×5 in. loaf pan by greasing with butter or cooking spray and lining with parchment paper so that there is some overhang on the sides, which will provide an easy way to lift the finished cake from the pan when ready for cooling.
In a large mixing bowl, combine together the flour, sugar, baking powder, and salt using a whisk.
Add the lemon zest and stir in thoroughly so that all of the pieces of zest are evenly distributed within the dry ingredients prior to adding any wet ingredients.
Once the dry ingredients have been whisked together and the mixture is evenly combined, create a well in the middle of the bowl with the dry ingredients.
In this well, pour in the beaten eggs, vegetable oil, melted unsalted butter, and vanilla extract.
Once all of these ingredients have been poured into the well, use a spatula or wooden spoon to mix the ingredients together very well until the batter is completely smooth and devoid of white streaks from dry flour.
Finally, gently mix in the yogurt or sour cream until just incorporated.
The batter will be thick.
Baking the Cake
Once your oven is preheated and you have prepared your loaf pan, pour the prepared batter into the loaf pan, smoothing out the top.
Bake the cake for approximately 50-55 minutes depending on your oven temperature and humidity levels.
The cake will be done when it is a very light golden brown in color around the outside edge and a toothpick inserted into the centre of the loaf comes out clean.
After removing the cake from the oven, allow it to cool in the loaf pan for approximately 15 minutes before carefully lifting it out using the parchment paper overhang on both sides and placing it onto a wire rack to cool completely before cutting into slices.

Everyday Cake

Instructions
- Preheat oven to 350F. Grease 9×5 inch loaf pan and line with parchment paper, leaving overhang.
- Whisk flour, sugar, baking powder, salt, and lemon zest in large bowl.
- Make well in center, add eggs, oil, melted butter, and vanilla.
- Mix until smooth, then fold in yogurt until just combined.
- Pour batter into pan and smooth top.
- Bake 50-55 minutes until golden and skewer comes out clean.
- Cool in pan 15 minutes, then remove to wire rack and cool completely before slicing.
