Everyday Cake

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • Zest of 1/2 lemon
  • 3 large eggs
  • 3 tablespoons vegetable oil
  • 7 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1/2 cup plain yogurt or sour cream

Make the Batter

Set your oven to 350F (325F if using a convection oven). Grease a 9×5 inch loaf pan and line it with parchment paper, leaving some overhang on the sides to use as handles later.

In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the lemon zest and whisk it in to distribute it evenly.

Make a well in the center of the dry ingredients. Pour in the beaten eggs, vegetable oil, melted butter, and vanilla extract.

Mix everything together with a spatula or wooden spoon until you have a smooth batter with no visible streaks of flour. Finally, stir in the yogurt or sour cream until it’s just combined.

The batter will be thick.

Bake the Cake

Pour the batter into the prepared loaf pan and smooth the top.

Bake for ~50-55 minutes. The cake is done when it’s golden brown and a skewer inserted into the center comes out clean.

Let the cake cool in the pan for about 15 minutes before using the parchment paper handles to lift it out onto a wire rack. Allow it to cool completely before slicing.

Everyday Cake

This is a simple, one-bowl loaf cake that’s moist and dense. The combination of oil and yogurt keeps it from drying out for several days. It’s a straightforward recipe for a basic, reliable cake.

  • Bake 50-55 minutes until golden and skewer comes out clean.
  • Cool in pan 15 minutes, then remove to wire rack and cool completely before slicing.

Notes

Use sour cream as alternative to yogurt. Batter will be thick.
