Ingredients (~8 servings)
- 2 1/4 cups frozen shelled edamame, thawed (~15 oz)
- 1 1/2 medium ripe avocados (~12 oz)
- 3 cloves garlic
- Zest and juice of 1 1/2 large lemons (~1/4 cup fresh lemon juice)
- 1 1/2 tsp kosher salt
- 3/4 tsp ground black pepper
- 3/4 tsp onion powder
- 1/4 cup + 1 Tbsp finely chopped fresh cilantro
- 1/4 cup extra-virgin olive oil
- Pita chips and veggies for serving
Frozen Edamame (Thaw Before Using)
To thaw frozen edamame, place them into a bowl and submerge them in hot water for approximately 3 to 4 minutes, then drain and dry off completely.
It is important for the edamame to be thawed and dry because any excess moisture will create a watery consistency in the final product.
Combine All Ingredients Except the Oil
Combine the edamame, avocado, garlic, lemon zest, lemon juice, salt, pepper, onion powder, and fresh cilantro in a food processor.
After adding all of these ingredients to the bowl, pulse a few times to break everything up, then run the food processor for approximately 30-45 seconds or until all ingredients have been blended thoroughly.
If necessary, stop mixing and scrape down the sides of the bowl.
Add Olive Oil While the Food Processor is Running
With the food processor on, drizzle the olive oil in through the feed hole of the food processor.
This should take about 10-15 seconds to pour in the entire amount of oil.
Mix for an additional 5 seconds or until smooth.
Adjust Seasonings to Taste
Taste the mixture and add any additional salt or pepper if desired.
I typically find that I add some extra salt at this stage.
When finished mixing, make sure that the texture is creamy, but still retains body.
Therefore, it should not have a completely fine texture or consistency like traditional hummus.

Edamame Hummus

Instructions
- Thaw edamame in hot water for 3-4 minutes, drain and pat dry.
- Add edamame, avocado, garlic, lemon zest, lemon juice, salt, pepper, onion powder, and cilantro to food processor.
- Pulse, then blend for 30-45 seconds until evenly mixed.
- Slowly drizzle olive oil while processing for 10-15 seconds.
- Blend additional 5 seconds until smooth.
- Taste and adjust seasoning as needed.
