Slow Cooker Refried Bean Dip

Ingredients (~6-8 servings)

  • 2 tablespoons bacon grease
  • ~1/2 pound ground beef
  • 1/2 cup diced onion
  • 1 (15-ounce) can refried beans
  • 2 teaspoons taco seasoning
  • 1 1/2 tablespoons taco sauce
  • 1/2 teaspoon garlic powder
  • ~1/2 pound American cheese, cubed
  • 1 green onion, sliced

 

Browning the Ground Beef & Onions

Start by heating the bacon grease in a nonstick pan over medium-high heat.

After about 2 minutes of cooking, add the chopped onion to the pan, allowing the onion to become translucent.

Once the onion has wilted and started to become slightly cooked, add the ground beef to the pan, using a fork to break up the meat as it cooks.

After cooking for approximately 8 minutes (or until there is no pink left in the centre of the beef), the ground beef should be done.

Mix in the Bean Base

After you’ve removed the pan from the heat source, mix in the refried beans, taco seasoning, taco sauce, and garlic powder into the ground beef/onions mixture.

Once everything has been combined, you will have a very thick mixture.

Transfer to Slow Cooker and Mix in American Cheese

Next, transfer your mixture to your greased 3-4 quart slow cooker and add the cubed American cheese.

You don’t need to redistribute the American cheese evenly, as it will melt into the mixture during the cooking process.

Cook Until Creamy and Melted

You can cook the dip for 1 hour (on HIGH), stirring the mixture halfway through; however, you could also cook on LOW for 2-3 hours.

The dip will be complete once all the cheese has melted and the mixture becomes creamy and smooth; at that time, sprinkle your sliced green onions on top before serving with tortilla chips.

  • ~1/2 pound American cheese cubed
  • 1 green onion sliced

Instructions

  • Heat bacon grease in skillet over medium-high heat.
  • Cook diced onions for 2 minutes until softened.
  • Add ground beef and cook until completely browned.
  • Remove from heat and mix in refried beans, taco seasoning, taco sauce, and garlic powder.
  • Transfer mixture to greased slow cooker.
  • Stir in cubed American cheese.
  • Cook on HIGH for 1 hour or LOW for 2-3 hours, stirring halfway through.
  • Sprinkle green onions on top before serving.

Notes

Serve with tortilla chips. Cheese will melt and incorporate during cooking.
