Ingredients (~6 servings)
- 1 lb frozen popcorn chicken
- 12 oz pasta (penne or rigatoni work well)
- 1 (24 oz) jar marinara sauce
- 1 1/2 cups shredded mozzarella cheese
- 3/4 cup parmesan cheese
- 2 Tbsp fresh basil, chopped
Cook the Pasta and Preheat Your Oven
Preheat your oven to 375F and spray a 9×13 casserole dish with cooking spray.
Bring a large pot of salted water to boil and cook the pasta until al dente according to package directions – usually ~1-2 minutes less than the package suggests since it’ll finish cooking in the oven.
Drain the pasta and dump it into a large mixing bowl.
Combine Everything and Assemble the Casserole
To the pasta, add the frozen popcorn chicken, marinara sauce, 3/4 cup of the parmesan, and 1 cup of the mozzarella.
Stir everything together until evenly mixed – the sauce should coat everything nicely.
Pour the mixture into your prepared casserole dish and spread it out evenly. Sprinkle the remaining 1/2 cup mozzarella on top.
Bake Until Bubbly and Golden
Bake for ~50-60 minutes or until the sauce is bubbling around the edges and the cheese on top starts turning golden brown.
The popcorn chicken will stay crispy on the parts that aren’t submerged in sauce.
Let it cool for ~10-15 minutes before serving – the cheese and sauce will be molten hot.
Top with the fresh basil and extra parmesan if you want.

Chicken Parmesan Casserole

- 1 1/2 cups shredded mozzarella cheese
- 3/4 cup parmesan cheese
- 2 Tbsp fresh basil chopped
Instructions
- Preheat oven to 375F and spray 9×13 dish with cooking spray.
- Boil pasta in salted water until just before al dente, about 1-2 minutes less than package instructions.
- Drain pasta and mix with frozen popcorn chicken, marinara sauce, 3/4 cup parmesan, and 1 cup mozzarella.
- Transfer mixture to prepared dish and top with remaining 1/2 cup mozzarella.
- Bake 50-60 minutes until sauce bubbles and cheese turns golden brown.
- Let cool 10-15 minutes before serving.
- Garnish with fresh basil and extra parmesan if desired.
