Irish Potatoes

Ingredients (~8 servings)

  • 4 1/2 lbs potatoes, peeled and halved
  • 3 3/4 cups cabbage, coarsely chopped
  • 9 garlic cloves, whole
  • 3 chicken bouillon cubes
  • 3/4 cup cream cheese
  • 1/3 cup milk
  • 1/4 cup salted butter
  • 1/3 cup sour cream
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Boil the Potatoes, Cabbage and Garlic

Add potatoes, cabbage, garlic and chicken bouillon cubes to a large pot of water on the stove.

Boil until potatoes are fork-tender, ~20-25 minutes.

The garlic will be completely soft at this point and the cabbage should be wilted but still have some bite to it.

Mash Everything Together

Drain the pot completely – you want to get rid of all that cooking liquid.

Add the cream cheese, milk, butter, sour cream and a good amount of salt and pepper to the pot.

Mash everything together; The garlic will break apart and distribute throughout.

The mixture should be creamy but still have some texture from the cabbage pieces.

Bake Until Golden

Preheat your oven to 350F.

Transfer the mashed potato mixture to a greased 3-quart casserole dish and cover with foil.

Bake for 45 minutes.

Remove the foil for the last 10 minutes if you want the top to get a bit golden and set up.

Garnish with chopped green onions if you’re using them.

Instructions

  • Add potatoes, cabbage, garlic, and bouillon cubes to a large pot of water and boil until potatoes are fork-tender, 20-25 minutes.
  • Drain completely and return to pot.
  • Add cream cheese, milk, butter, sour cream, salt, and pepper to the pot.
  • Mash everything together until creamy with some texture remaining.
  • Preheat oven to 350F.
  • Transfer mixture to a greased 3-quart casserole dish and cover with foil.
  • Bake for 45 minutes, removing foil for the last 10 minutes for a golden top.
  • Garnish with chopped green onions if desired.
