Beer Cheese Dip

Ingredients (~8-10 servings)

  • 3/4 cup heavy cream
  • 1 egg yolk
  • 1 1/2 Tbsp Worcestershire sauce
  • 1 1/2 tsp dijon mustard
  • 3/4 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 3/4 tsp fine sea salt
  • 1/3 cup beer (PBR works great)
  • 3 cups sharp cheddar cheese, grated by hand

Combine Base Ingredients and Heat

In a medium saucepan, combine the Worcestershire sauce, Dijon mustard, garlic powder, black pepper, paprika, and salt along with the egg yolk and heavy cream, and set the heat to medium.

Allow the mixture to heat up until bubbling, at which point it should be simmering; if the mixture is rolling it is too hot.

Add Beer and Cheese

Once the mixture is simmering, add the shredded cheddar cheese and beer to your mixture and stir with a wire whisk.

It will look clumpy initially due to the cheese melting in the beer, but continue stirring for 1 minute after adding both ingredients.

Finish Off Heat Until Smooth

Remove the pot from the heat and continue stirring until the cheese has melted completely, making the dip smooth and creamy.

If you find that your mixture is too thick, slowly add 1 tablespoon of beer at a time until desired consistency is reached.

Enjoy While Hot

Serve this delicious cheesy dip immediately after cooking while it is still warm, either with fresh-baked soft pretzels or crusty bread.

Beer Cheese Dip

This takes less than 10 minutes from start to finish. The egg yolk keeps it smooth and prevents the cheese from breaking when it hits the heat.

Instructions

  • Combine cream, egg yolk, Worcestershire, dijon, garlic powder, pepper, paprika, and salt in saucepan.
  • Heat to light simmer over medium heat.
  • Add beer and shredded cheddar cheese all at once.
  • Stir constantly for 1 minute until mixture starts to smooth out.
  • Remove from heat and continue stirring until cheese fully melts.
  • Thin with additional beer if needed.
  • Serve immediately with pretzels or bread.

Notes

Use sharp cheddar and grate cheese by hand for best texture.
