Chipotle Mayonnaise

Ingredients (~12 servings)

  • 1 1/2 cups mayonnaise
  • 1 1/2 Tbsp fresh lime juice, from ~1 large lime
  • 2-3 Tbsp whole milk (optional, for thinning)
  • 1 Tbsp chipotle chili powder

Mix Everything Together Until Smooth

In a small bowl, stir together the mayonnaise, lime juice, and chipotle chili powder until well combined.

The chipotle powder will clump up at first but just keep stirring – it’ll smooth out.

If you want it thinner for drizzling or dipping, add the milk 1 tablespoon at a time until you get the consistency you want.

This keeps in the fridge for ~1 week and gets better after sitting for a few hours as the flavors meld.

Chipotle Mayonnaise

This is a basic chipotle mayo that takes ~5 minutes to make and goes on everything – burgers, tacos, grilled chicken, whatever. I always have chipotle chili powder on hand so this gets made pretty regularly.

Instructions

  • Combine mayonnaise, lime juice, and chipotle chili powder in a small bowl.
  • Stir until smooth, breaking up any clumps of chipotle powder.
  • Add milk 1 tablespoon at a time if a thinner consistency is desired.
  • Refrigerate until ready to use.

Notes

Flavors improve after a few hours. Keeps refrigerated for up to 1 week.
