Crumbl Birthday Cake Cookies

By Sam Pierce

Ingredients (~6 cookies)

Cake Batter Cookie Base

  • 1/3 cup salted butter, softened
  • 1/3 cup granulated sugar
  • 1 egg
  • 1/2 tsp cake batter flavoring
  • 1 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1 Tbsp sprinkles, optional

Cake Batter Cream Cheese Frosting

  • 2 oz cream cheese, room temperature
  • 1 Tbsp salted butter, softened
  • 1/4 tsp cake batter flavoring
  • 1 cup powdered sugar
  • milk, to thin if needed

Preheat Oven and Make Cookie Dough

Get your oven to 350F.

Cream together 1/3 cup softened butter and 1/3 cup granulated sugar until light and fluffy – this takes ~3-4 minutes with a stand mixer.

Scrape the sides, add 1 egg and 1/2 tsp cake batter flavoring. Beat until mixed.

Scrape the sides again and add 1 cup flour and 3/4 tsp baking powder. Mix until thoroughly combined.

If you’re using sprinkles, fold in 1 Tbsp now.

Shape and Bake the Cookies

Scoop out 1/3 cup of dough and roll into a ball – repeat with remaining dough.

Flatten each ball gently so it looks like a hockey puck. These cookies spread a bit but not much.

Arrange all 6 cookies on one pan with plenty of space between them.

Bake at 350F for ~12-15 minutes or until the centers have puffed up and are no longer glossy.

The edges shouldn’t be brown – they’ll look slightly underdone but will continue cooking as they cool.

Make the Frosting While Cookies Cool

Whip 2 oz cream cheese and 1 Tbsp softened butter until smooth – no lumps.

Add 1 cup powdered sugar gradually, mixing until fully incorporated.

Add 1/4 tsp cake batter flavoring.

If the frosting is too thick to pipe, add milk 1 tsp at a time until you get a consistency that holds its shape but isn’t stiff.

Frost and Serve

Put the frosting in a zip-top bag, cut the corner, and pipe onto the warm cookies in a spiral pattern.

Top with more sprinkles if you want.

Serve while the cookies are still warm – the frosting gets slightly melty and the cookies are at their softest.

Crumbl Birthday Cake Cookies

These are thick, cake-like cookies with serious cake batter flavor and a cream cheese frosting that’s basically buttercream. They’re meant to be eaten warm when the frosting gets slightly melty.
