Taco Soup With Ground Beef

Ingredients (~8 servings)

  • 2 lbs ground beef
  • 1 large onion, diced (~2 cups)
  • 3 cups water
  • 2 cans kidney beans, undrained
  • 2 cans diced tomatoes, undrained
  • 1 can corn, undrained
  • 1 can diced green chiles, undrained
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • Shredded cheese, sour cream, diced avocado, cilantro, and tortilla chips for serving

 

Brown the Beef and Onions

In a Dutch oven or large stock pot over medium-high heat, cook the ground beef and diced onion until the beef is browned, ~5-6 minutes.

Break up the meat as it cooks so you don’t end up with big chunks. Drain the fat well – there’s going to be quite a bit with 2 lbs of beef.

Add Everything and Simmer

Add the water, kidney beans, diced tomatoes, corn, and green chiles to the pot. Stir in the taco seasoning and ranch dressing mix.

The ranch powder will clump at first but it’ll dissolve as it heats up. Bring everything to a boil, then reduce heat to medium-low and simmer for ~20 minutes.

The soup is ready when the flavors have melded together and it’s heated through.

Serve With Toppings

Ladle into bowls and top with shredded cheese, sour cream, diced avocado, cilantro, and tortilla chips.

The cheese melts right into the hot soup and the cool toppings balance out the heat from the chiles.

This is pure Midwest comfort food – it’s basically everything good from a taco thrown into a pot. Takes about 30 minutes and uses stuff most people already have.

Instructions

  • Brown ground beef and onions in large pot over medium-high heat for 5-6 minutes, draining excess fat.
  • Add water, kidney beans, tomatoes, corn, green chiles, taco seasoning, and ranch mix.
  • Bring to boil, then simmer for 20 minutes until flavors combine.
  • Serve with shredded cheese, sour cream, diced avocado, cilantro, and tortilla chips.

Notes

Cheese will melt into hot soup; toppings balance spice from chiles.
