Cinnamon Sugar Cookies

Ingredients (~18 cookies)

  • 1 3/4 cups dark brown sugar
  • 3/4 cup unsalted butter, softened
  • 1 large egg
  • 2 3/4 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 3/4 tsp kosher salt
  • 2 3/4 tsp ground cinnamon

Make the Cookie Dough

In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon. Set this aside.

In the bowl of a stand mixer with the paddle attachment, cream the softened butter and dark brown sugar until a paste forms. Don’t over-cream it; you don’t want to incorporate too much air, which would make the cookies cakey instead of chewy.

Add the egg and vanilla extract, and beat well to combine.

Reduce the mixer to low and add the dry ingredients in three additions. Mix until just combined.

Chill the Dough

Scoop the dough into balls, about 1/4 cup each. Place them on a parchment-lined baking sheet.

Chill the dough for at least 2 hours before baking. For the best chewy texture, freeze them solid.

Chilling the dough is a necessary step; it prevents the cookies from spreading too much and ensures a chewy center.

Bake the Cookies

Preheat the oven to 350F.

Place the chilled or frozen dough balls on a parchment-lined cookie sheet.

Bake for ~17-20 minutes. The edges should be golden brown and the centers should be puffed up and look matte, not shiny. Let them cool on the baking sheet.

Cinnamon Sugar Cookies

If you like the gooey inside of a cinnamon roll, make these cookies. They’re soft, chewy, and use dark brown sugar for a richer molasses flavor. The dough needs to be chilled, and it bakes well from frozen.

  • Bake 17-20 minutes until edges are golden and centers are matte.
  • Cool cookies on baking sheet.

Notes

Chilling dough is essential for chewy texture and prevents spreading.
