Ingredients (~27 cookies)
- 4 cups all purpose flour
- 2 tsp ground cardamom
- 1 tsp baking soda
- 1 tsp fine sea salt
- 1/2 tsp cream of tartar
- 1 1/2 cups unsalted butter, room temperature
- 2 1/2 cups granulated sugar
- 2 large eggs
- 1 1/2 tbsp vanilla extract
- 1/3 cup granulated sugar
- 1 1/2 tsp ground cardamom
Preheat Oven to 350F and Mix Your Dry Ingredients
Get your oven going with the rack in the center position.
In a medium bowl, whisk together the flour, 2 tsp cardamom, baking soda, salt, and cream of tartar. Set this aside.
Cream Butter and Sugar in Stand Mixer
Beat the butter in a stand mixer with the paddle attachment until it’s soft – about 1-2 minutes.
Add the 2 1/2 cups sugar and beat at medium speed until it’s very light and fluffy, about 3 minutes.
Add both eggs and vanilla extract; mix until combined.
Add Dry Ingredients to Form Cookie Dough
Scatter the flour mixture into the bowl and mix on low speed just until combined.
Don’t overmix this – you want the dough to just come together.
Make Cardamom Sugar for Rolling
In a small bowl, combine the 1/3 cup sugar with 1 1/2 tsp cardamom.
This is what gives the cookies their speckled look and extra cardamom flavor on the outside.
Scoop and Roll Cookie Dough
Use a cookie scoop or spoon to portion out 3-tablespoon sized portions of dough – they should be about golf ball sized.
Roll each portion in the cardamom sugar mixture to coat completely.
Place on parchment-lined baking sheets with about 2 inches between each cookie.
I usually fit 6 cookies on an 18 x 13 inch baking sheet.
Bake Until Edges Are Set
Bake for ~13-15 minutes until the bottoms are pale golden and the sides look set.
The tops might still look slightly underbaked but they’ll finish cooking as they cool.
Let them cool on the baking sheet for 10 minutes before transferring to a wire rack.
The cookies will be soft and chewy once they cool completely.

Soft Cardamom Cookies

- Mix 1/3 cup sugar with 1 1/2 tsp cardamom in a small bowl.
- Scoop 3-tablespoon portions of dough and roll in cardamom sugar.
- Place on parchment-lined baking sheets 2 inches apart.
- Bake 13-15 minutes until edges are set and bottoms are pale golden.
- Cool on baking sheet 10 minutes before transferring to wire rack.
