Soft Cardamom Cookies

Ingredients (~27 cookies)

  • 4 cups all purpose flour
  • 2 tsp ground cardamom
  • 1 tsp baking soda
  • 1 tsp fine sea salt
  • 1/2 tsp cream of tartar
  • 1 1/2 cups unsalted butter, room temperature
  • 2 1/2 cups granulated sugar
  • 2 large eggs
  • 1 1/2 tbsp vanilla extract
  • 1/3 cup granulated sugar
  • 1 1/2 tsp ground cardamom

 

Preheat Oven to 350F and Assemble Your Dry Ingredients

Begin by preheating your oven to 350°F with the center rack in place.

In a medium bowl, add the flour, 2 tsp of cardamom, baking soda, salt, and cream of tartar and mix together until combined.

Use Stand Mixer To Create Creamed Butter & Sugar

Place butter into the bowl of your stand mixer with the paddle attachment and beat until softened, about 1-2 minutes.

Add in 2 1/2 cups of sugar and mix on the medium setting until the mixture is light and fluffy, about 3 minutes.

Add in the eggs and the vanilla extract, mixing until both are completely incorporated into the creamed mixture.

Add Dry Ingredients To Complete The Cookie Dough

Pour the flour mixture over the creamed mixture, mixing just until the flour has been incorporated into the dough.

Do not continue mixing or you will end up with tough cookies.

Creating Cardamom Coating For Cookies

In a small bowl, add the 1/3 cup of sugar and 1 1/2 tsp cardamom to create a sugar coating for the cookies.

Using A Cookie Scoop/Spoon To Portion Out Dough

Using a cookie scoop or spoon, portion out the dough into 3-tablespoon sized balls.

Roll each ball into the cardamom sugar coating, fully coating it.

Place the dough balls 2 inches apart on a parchment-lined baking sheet.

I will usually fit a total of 6 cookies on each 18 x 13 inch baking sheet; they will take around 13-15 minutes to finish baking, until the underside is a pale gold color and the sides are set.

The center of the cookies will still look slightly undercooked and will continue to cook while they cool down.

After 10 minutes on the baking sheets, the cookies can be moved off the baking sheets and onto wire racks for further cooling.

Once cooled completely, the cookies will be chewy and soft.

Soft Cardamom Cookies

These are really simple drop cookies that don’t require any chilling or rolling. I like making these because they’re done in 30 minutes and the cardamom gives them something different from regular sugar cookies.

Instructions

  • Preheat oven to 350F with rack in center position.
  • Whisk flour, 2 tsp cardamom, baking soda, salt, and cream of tartar in a medium bowl.
  • Beat butter in stand mixer until soft, about 1-2 minutes.
  • Add 2 1/2 cups sugar and beat until light and fluffy, about 3 minutes.
  • Mix in eggs and vanilla extract until combined.
  • Add flour mixture on low speed just until dough forms.
  • Mix 1/3 cup sugar with 1 1/2 tsp cardamom in a small bowl.
  • Scoop 3-tablespoon portions of dough and roll in cardamom sugar.
  • Place on parchment-lined baking sheets 2 inches apart.
  • Bake 13-15 minutes until edges are set and bottoms are pale golden.
  • Cool on baking sheet 10 minutes before transferring to wire rack.

Notes

Cookies will be soft and chewy when completely cooled.
