Ingredients (~9 servings)
- 3/4 pound ground beef
- 6 ounces cream cheese
- 1 (10-ounce) can Rotel tomatoes, undrained
- 1 1/2 cups shredded cheddar cheese
- 1 (3-ounce) package bacon bits
- 3/4 teaspoon ground mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 3 tablespoons chopped dill pickles (optional)
Browning Ground Beef
To brown ground beef, use a skillet and heat on medium-high. Use a wooden spoon or spatula to break the ground beef down as it continues to cook.
Drain any fat off the skillet, then transfer the cooked ground beef to a 6-quart slow cooker.
Add Remaining Ingredients and Cook
Add the cream cheese, Rotel tomatoes, cheddar cheese, bacon bits, ground mustard, garlic powder, and black pepper to the slow cooker with the beef. Cover with the lid and cook on LOW for about two to two and a half hours, opening the lid at least every 30-45 minutes to stir everything up.
Initially, when the cream cheese is added to the cooked ground beef, it will be lumpy, but eventually the melting process will cause it to smooth out.
If using dill pickles, add them to the mixture for the final 30 minutes of cooking, as this will help keep the pickles from becoming mushy.

Crockpot Bacon Cheeseburger Dip
Ingredients

- 3/4 pound ground beef
- 6 ounces cream cheese
- 1 can Rotel tomatoes 10-ounce, undrained
- 1 1/2 cups shredded cheddar cheese
- 1 package bacon bits 3-ounce
- 3/4 teaspoon ground mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 3 tablespoons chopped dill pickles optional
Instructions
- Brown ground beef in skillet, drain grease, transfer to slow cooker.
- Add cream cheese, Rotel tomatoes, cheddar cheese, bacon bits, mustard, garlic powder, and black pepper.
- Cook on LOW for 2-2.5 hours, stirring every 30-45 minutes.
- Stir in chopped dill pickles during last 30 minutes if using.
