Easy Roasted Asparagus

Ingredients (~6 servings)

  • 1 1/2 bunches asparagus (ends trimmed)
  • 3 Tbsp olive oil
  • 1 1/2 Tbsp lemon juice
  • 3/4 tsp garlic powder
  • Salt & pepper (to taste)
  • 3/4 cup freshly grated parmesan cheese (optional)

Prep Your Oven and Asparagus

Preheat your oven to 425F and move the rack to the middle position.

Place the asparagus on a large baking sheet; line with parchment paper if you want easier cleanup.

Pour the olive oil and lemon juice over the asparagus, then sprinkle with the garlic powder and a good amount of salt and pepper.

Use your hands to toss everything together, then spread the asparagus in an even layer so the spears aren’t overlapping.

Add Parmesan and Roast

Sprinkle the parmesan evenly over the asparagus if using.

Roast uncovered for ~12-15 minutes or until the spears are tender-crisp when you pierce them with a fork.

Asparagus thickness varies a lot, so check for doneness on the earlier side if your spears are average thickness. For really thin asparagus, start checking after ~10 minutes.

The tips should be lightly browned and the parmesan should look golden in spots.

Easy Roasted Asparagus

This is a simple side dish that works with pretty much any main course. The parmesan adds a nice salty finish but you can skip it if you want to keep things lighter.

  • Drizzle with olive oil and lemon juice, then sprinkle with garlic powder, salt, and pepper.
  • Toss with hands and spread in even layer without overlapping.
  • Sprinkle parmesan evenly over asparagus.
  • Roast uncovered for 12-15 minutes until tender-crisp and lightly browned at tips.

Notes

Check thin asparagus at 10 minutes; thicker spears may need full 15 minutes.
