Ingredients (~6 servings)
- 1 1/2 bunches asparagus (ends trimmed)
- 3 Tbsp olive oil
- 1 1/2 Tbsp lemon juice
- 3/4 tsp garlic powder
- Salt & pepper (to taste)
- 3/4 cup freshly grated parmesan cheese (optional)
Prepare the Oven and Asparagus
To make the asparagus, first preheat your oven to 425F.
Be sure to place the baking rack in the middle position of the oven so that your asparagus has plenty of room to cook evenly.
Next, place all of the asparagus on a large baking sheet.
If you are looking for an easy way to clean up afterwards, then line your baking sheet with parchment paper.
Next, pour the olive oil and lemon juice on the asparagus.
Then sprinkle garlic powder, a generous pinch of salt, and a good amount of ground black pepper on top of the asparagus.
You will now want to toss everything together with your hands, and then spread the asparagus out into an even layer so that there are no overlapping spears of asparagus.
Add Parmesan and Roast
If you are using Parmesan cheese, sprinkle it evenly all over the top of the asparagus.
Place the baking sheet in the oven on the middle rack and allow the asparagus to roast in the uncovered oven for ~12-15 minutes or until you can easily pierce the spears with a fork and when removed from the baking sheet they are still somewhat tender.
As with many vegetables, the cooking time of asparagus will depend on the thickness of the spears.
If you are using spears that are of average thickness, then start checking them for doneness after ~12 minutes.
If you have very thin spears, then you may want to start checking them after only about 10 minutes.
The tips of the asparagus should be lightly browned, as well as the Parmesan cheese spots, which should be golden brown.

Easy Roasted Asparagus

Instructions
- Preheat oven to 425F with rack in middle position.
- Place trimmed asparagus on a baking sheet.
- Drizzle with olive oil and lemon juice, then sprinkle with garlic powder, salt, and pepper.
- Toss with hands and spread in even layer without overlapping.
- Sprinkle parmesan evenly over asparagus.
- Roast uncovered for 12-15 minutes until tender-crisp and lightly browned at tips.
