Brown Sugar Ham and Cheese Sliders

Ingredients (~18 sliders)

  • 1 1/2 packages Hawaiian rolls (18 rolls)
  • 3 Tbsp mayonnaise
  • 1 1/2 lbs freshly-shaved black forest ham or leftover ham
  • 3/4 lb freshly-sliced havarti, Swiss, or white cheddar cheese
  • 6 Tbsp unsalted butter, melted
  • 1 1/2 Tbsp brown sugar, packed
  • 1 1/2 Tbsp Dijon mustard
  • 1 1/2 tsp Worcestershire sauce
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder
  • 1 1/2 Tbsp poppy seeds
  • 1 1/2 Tbsp freshly-minced chives, for sprinkling

Prep the Pan and Rolls

Preheat your oven to 350F and grease a 9×13 pan with cooking spray.

Using a sharp bread knife, slice the 18 rolls in half horizontally; keep the bottoms and tops intact as one piece. Place the bottom half in your prepared pan and spread the 3 Tbsp mayonnaise evenly across the surface.

Layer the Ham and Cheese

Evenly layer half of the 1 1/2 lbs ham over the bottom rolls, followed by half of the 3/4 lb cheese. Add another layer with the remaining ham and cheese – you’ll have two total layers.

Place the top rolls over the ham and cheese.

The double layer helps ensure you get ham and cheese in every bite instead of having some sliders that are mostly bread.

Make the Brown Sugar Glaze

In a bowl, whisk together the 6 Tbsp melted butter, 1 1/2 Tbsp brown sugar, 1 1/2 Tbsp Dijon mustard, 1 1/2 tsp Worcestershire sauce, 3/4 tsp garlic powder, 3/4 tsp onion powder, and 1 1/2 Tbsp poppy seeds until smooth.

Using a pastry brush, brush the mixture on top of the rolls, getting into all the nooks and crannies. Pour any remaining sauce over the top.

Bake the Sliders

Cover the pan tightly with foil and bake for 20 minutes.

Remove the foil and bake for another 8-10 minutes, until the ham and cheese is heated through and the tops are golden-brown.

The initial covered baking steams the sliders to heat everything through; the uncovered time crisps up the tops.

Finish and Serve

Garnish with the 1 1/2 Tbsp fresh chives, slice between the rolls, and serve immediately.

These are best served warm but will hold in a low oven for ~30 minutes if you need to keep them ready for a party.

These are perfect for using up leftover holiday ham or when you need an easy appetizer that feeds a crowd. The brown sugar glaze keeps them from being too sweet while adding just enough flavor to make them addictive.

  • Place bottom halves in pan and spread mayonnaise evenly across.
  • Layer half the ham, then half the cheese over the mayonnaise.
  • Add remaining ham and cheese for a second layer.
  • Place top roll halves over the filling.
  • Whisk together melted butter, brown sugar, Dijon mustard, Worcestershire sauce, garlic powder, onion powder, and poppy seeds.
  • Brush glaze over tops of rolls, working into nooks and crannies, then pour any remaining sauce over top.
  • Cover pan tightly with foil and bake for 20 minutes.
  • Remove foil and bake 8-10 minutes more until cheese is melted and tops are golden brown.
  • Garnish with fresh chives, slice between rolls, and serve immediately.

Notes

These sliders can be held in a low oven for about 30 minutes if needed.
