Chicken, Bacon and Cheddar Pinwheels

Ingredients (~18 pinwheels)

  • 12 oz cream cheese, softened
  • 2 Tbsp Ranch seasoning
  • 1 1/2 Tbsp milk
  • ~2 1/4 cups finely diced cooked chicken
  • 12 slices bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 3 green onions, sliced
  • 5 large flour tortillas

 

Make the Cream Cheese Base

Place the cream cheese, Ranch seasoning, and milk in a large bowl.

Use a hand mixer to beat until smooth – the ranch powder clumps at first but breaks down after ~30 seconds of mixing.

Add the Filling Ingredients

Stir in the chicken and bacon until mixed evenly throughout.

Add the cheddar cheese and green onions; mix until everything is well distributed.

The mixture should hold together but still be spreadable.

Prep the Tortillas and Roll

Place tortillas on a microwave-safe plate with a damp paper towel on top. Microwave for 20 seconds.

This makes them pliable and prevents tearing when you roll them up.

Spread about 1/5 of the mixture on each tortilla, leaving a 1/2 inch border on all sides.

Roll them up tightly – start from one end and keep the filling compressed as you roll.

Chill and Slice

Wrap each roll individually in plastic wrap and refrigerate for at least 1 hour.

The chilling firms up the cream cheese so they slice cleanly without falling apart.

Slice each roll into ~6-8 pieces using a sharp knife and serve immediately.

These creamy tortilla roll-ups are perfect when you need something that looks fancy but takes 15 minutes to prep. I always make extra because they disappear fast at parties.

  • Microwave tortillas 20 seconds with damp paper towel to soften.
  • Spread mixture on tortillas, leaving 1/2 inch border.
  • Roll tightly from one end, keeping filling compressed.
  • Wrap each roll in plastic and refrigerate 1 hour.
  • Slice into 1-inch pieces with sharp knife.
  • Serve chilled.

Notes

Best served within 24 hours of preparation.
