Ingredients (~8 servings)
- 1 1/2 lbs cooked chicken meat (shredded or cut into 1 inch pieces)
- 1 1/2 lbs pasta
- 1 1/2 (16 oz) jars Alfredo sauce
- 1 1/2 cups sour cream
- 1 1/2 packets ranch dressing seasoning
- 1/3 cup bacon bits (or 6 strips cooked and chopped)
- 3 cups shredded swiss cheese (divided)
- 1 1/2 Tbsp chopped parsley (optional)
Prep the Oven and Cook the Pasta
Preheat your oven to 375F and lightly grease a 9″ x 13″ casserole baking dish.
Boil the pasta according to box directions to the “al dente” stage. You want it slightly underdone since it’ll continue cooking in the oven.
Drain and set aside.
Make the Ranch Sauce Base
In a large bowl, stir together the Alfredo sauce, sour cream, ranch seasoning, bacon pieces, and 2 cups of the Swiss cheese.
The ranch powder will look chunky at first but keep stirring; it’ll dissolve into the sauce.
Add the pasta and chicken; stir until everything is well coated.
Assemble and Bake the Casserole
Pour the mixture into your prepared baking dish and spread it out evenly.
Top with the remaining 1 cup of Swiss cheese and any extra bacon bits.
Bake for ~25-30 minutes or until the cheese on top is melted and starting to brown around the edges.
The casserole should be bubbling around the sides when it’s ready.
Top with parsley if using and serve immediately while the cheese is still stretchy.
