Creamy Lasagna Soup

Ingredients (~6 servings)

  • 1 lb ground Italian sausage or ground beef
  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups tomato sauce or marinara
  • 4 cups beef or vegetable broth
  • 2 cups water
  • 1 cup heavy cream
  • 10 lasagna noodles, broken into bite-sized pieces
  • 4 cups fresh spinach, roughly chopped
  • 1 cup mozzarella cheese, grated
  • Diamond Crystal kosher salt and black pepper to taste
  • Ricotta cheese, for garnish

Brown the Meat and Aromatics

In a large pot or Dutch oven over medium-high heat, add the ground sausage or beef. Break it apart with a spoon as it cooks.

Once the meat is browned, drain off the excess grease.

Reduce the heat to medium and add the diced onion. Cook for ~3-4 minutes until softened. Add the garlic and cook for another minute until fragrant.

Stir in the tomato paste and cook for ~2-3 minutes.

This step cooks out the raw taste of the paste and deepens the tomato flavor.

Simmer the Soup

Pour in the beef broth, tomato sauce, water, and heavy cream. Stir everything together.

Add the broken lasagna noodles to the pot and stir again.

Bring the soup to a simmer, then cover and cook for ~10-12 minutes, or until the noodles are al dente. Stir every few minutes to prevent the noodles from sticking to the bottom of the pot.

Finish the Soup

Once the noodles are cooked, stir in the chopped spinach and grated mozzarella cheese.

Cook for another ~2-3 minutes, until the spinach has wilted and the cheese is fully melted into the soup.

Serve the soup in bowls with a dollop of ricotta on top.

Creamy Lasagna Soup

If you like lasagna but want a quicker, one-pot version, this soup is a good alternative. It has all the same components – savory meat, a rich tomato-cream broth, and cheesy toppings – but comes together in about 30 minutes.

Instructions

  • Brown Italian sausage in large pot over medium-high heat, breaking apart while cooking.
  • Drain excess grease, reduce heat to medium and cook onions 3-4 minutes.
  • Add garlic, cook 1 minute.
  • Stir in tomato paste, cook 2-3 minutes.
  • Add beef broth, tomato sauce, water, and heavy cream.
  • Add broken lasagna noodles, bring to simmer.
  • Cover and cook 10-12 minutes until noodles are al dente, stirring occasionally.
  • Stir in spinach and mozzarella, cook 2-3 minutes until spinach wilts and cheese melts.
  • Top with ricotta and serve hot.

Notes

Stir soup regularly to prevent noodles from sticking to pot bottom.
