Garlic Feta Dip

Ingredients (~8 servings)

  • 9 oz crumbled feta cheese (divided)
  • 6 oz light cream cheese (Neufchatel cheese, at room temperature)
  • 1/2 cup plain non-fat Greek yogurt
  • 3 cloves garlic
  • 1 1/2 Tbsp freshly squeezed lemon juice
  • 3/4 tsp dried oregano
  • 1/4 tsp ground black pepper
  • 3/4 cup diced red bell pepper
  • 3 Tbsp chopped fresh parsley
  • For serving: crackers, fresh veggies, pita bread or pita chips

 

Blend the Base in a Food Processor

In the bowl of a food processor fitted with a steel blade, add about 6 oz of the feta (save the rest for topping), the cream cheese, Greek yogurt, garlic cloves, lemon juice, oregano, and black pepper.

Blend until smooth and creamy; this takes ~30-45 seconds.

The mixture should be completely smooth with no visible chunks of garlic or feta.

Transfer and Top the Dip

Transfer the dip to a serving bowl, then sprinkle with the remaining 3 oz of feta, diced bell pepper, and parsley.

The contrast between the smooth base and chunky toppings is what makes this work.

Serve immediately with crackers and veggies, or refrigerate for up to 1 day.

If making ahead, add the bell peppers and parsley just before serving so they stay bright and crisp.

Garlic Feta Dip

This dip takes less than 10 minutes to throw together. Way better than the store-bought versions and you can control how garlicky it gets.

Instructions

  • Add 6 oz feta, cream cheese, yogurt, garlic, lemon juice, oregano, and pepper to food processor.
  • Blend until smooth, about 30-45 seconds.
  • Transfer to serving bowl.
  • Top with remaining feta, diced bell pepper, and parsley.
  • Serve immediately with crackers or veggies.

Notes

Can be refrigerated up to 1 day. Add fresh toppings just before serving.
