Ingredients (~8 servings)
- 9 oz crumbled feta cheese (divided)
- 6 oz light cream cheese (Neufchatel cheese, at room temperature)
- 1/2 cup plain non-fat Greek yogurt
- 3 cloves garlic
- 1 1/2 Tbsp freshly squeezed lemon juice
- 3/4 tsp dried oregano
- 1/4 tsp ground black pepper
- 3/4 cup diced red bell pepper
- 3 Tbsp chopped fresh parsley
- For serving: crackers, fresh veggies, pita bread or pita chips
Make the Base in a Food Processor
Add approximately 6 oz of the feta cheese (set the rest aside for toppings), the cream cheese, yogurt, garlic, lemon juice, oregano, and black pepper to the bowl of a food processor fitted with a metal blade.
Blend until it reaches a silky texture; this should take approximately 30-45 seconds.
There should be no lumpy garlic or feta visible in the mixture.
Transfer & Finish Dip
Pour the dip into a serving bowl and sprinkle the remaining 3 oz of feta cheese, chopped bell pepper, and parsley on top of the dip.
The smooth texture of the dip combined with the chunky toppings creates an attractive presentation.
Serve instantly with crackers, vegetables, pita bread, or pita chips, or you can keep it refrigerated for up to 1 day.
When preparing ahead, add the bell pepper and parsley right before serving to keep their colour and crunchiness.
