Slow Cooker Refried Bean Dip

Ingredients (~6-8 servings)

  • 2 tablespoons bacon grease
  • ~1/2 pound ground beef
  • 1/2 cup diced onion
  • 1 (15-ounce) can refried beans
  • 2 teaspoons taco seasoning
  • 1 1/2 tablespoons taco sauce
  • 1/2 teaspoon garlic powder
  • ~1/2 pound American cheese, cubed
  • 1 green onion, sliced

 

Brown the Ground Beef and Onion

Heat bacon grease over medium-high heat in a nonstick skillet.

Add the diced onion and cook for ~2 minutes until it starts to soften.

Add the ground beef and cook until browned, crumbling it as it cooks.

The beef should be completely cooked through with no pink remaining.

Mix in the Bean Base

Remove the skillet from heat and stir in the refried beans, taco seasoning, taco sauce, and garlic powder.

Mix everything together until well combined.

The mixture will be thick at this point.

Transfer to Slow Cooker and Add Cheese

Transfer the beef and bean mixture to a greased 3-4 quart slow cooker.

Stir in the cubed American cheese.

The cheese doesn’t need to be perfectly distributed – it’ll melt and incorporate as it cooks.

Cook Until Melted and Creamy

Cover and cook on HIGH for 1 hour, stirring halfway through.

You can also cook on LOW for 2-3 hours if you prefer.

The dip is done when the cheese is completely melted and the mixture is smooth and creamy.

Sprinkle the sliced green onions on top before serving with tortilla chips.

Instructions

  • Heat bacon grease in skillet over medium-high heat.
  • Cook diced onions for 2 minutes until softened.
  • Add ground beef and cook until completely browned.
  • Remove from heat and mix in refried beans, taco seasoning, taco sauce, and garlic powder.
  • Transfer mixture to greased slow cooker.
  • Stir in cubed American cheese.
  • Cook on HIGH for 1 hour or LOW for 2-3 hours, stirring halfway through.
  • Sprinkle green onions on top before serving.

Notes

Serve with tortilla chips. Cheese will melt and incorporate during cooking.
