Sun-Dried Tomato Dip with Italian Seasoning

Ingredients (~8-10 servings)

  • 1 1/2 cups sour cream
  • 3/4 cup mayonnaise
  • 3/4 cup sun-dried tomatoes, very finely chopped (dry-packed, not oil-packed)
  • 1 Tbsp Italian herb seasoning mix (no salt)
  • 1 1/2 tsp dried basil
  • 3/4 tsp onion powder
  • 3/4 tsp finely ground black pepper
  • 1/4 tsp finely ground sea salt
  • 1/4 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes

Mix All Ingredients Together

Add everything to a medium bowl and stir until well combined.

The dip will look pretty thin at first – that’s normal. The sun-dried tomatoes and seasonings will absorb moisture as it sits.

Refrigerate for at Least 4 Hours

Cover tightly with plastic wrap and refrigerate.

This resting time is important – the dip thickens up and all the flavors meld together.

Serve with Crackers or Chips

Works great with naan crackers, pita chips, corn chips, or regular crackers.

You can also use this as a sandwich spread for wraps or subs.

If you want to dress it up, fold in some freshly grated parmesan or add a sprinkle on top before serving.

Sun-Dried Tomato Dip with Italian Seasoning

This dip takes ~10 minutes to mix up but needs at least 4 hours in the fridge to thicken and let the flavors develop. The sun-dried tomatoes soften up and the whole thing gets creamy and spreadable.

Instructions

  • Combine sour cream, mayonnaise, finely chopped sun-dried tomatoes, Italian seasoning, basil, onion powder, black pepper, salt, garlic powder, and red pepper flakes in a medium bowl.
  • Stir until well combined.
  • Cover tightly and refrigerate for at least 4 hours to thicken and allow flavors to meld.
  • Serve with crackers, chips, or use as a sandwich spread.

Notes

Dip will appear thin initially but thickens as it chills. Use dry-packed sun-dried tomatoes, not oil-packed.
