Sun-Dried Tomato Dip with Italian Seasoning

By Sam Pierce

Ingredients (~8-10 servings)

  • 1 1/2 cups sour cream
  • 3/4 cup mayonnaise
  • 3/4 cup sun-dried tomatoes, very finely chopped (dry-packed, not oil-packed)
  • 1 Tbsp Italian herb seasoning mix (no salt)
  • 1 1/2 tsp dried basil
  • 3/4 tsp onion powder
  • 3/4 tsp finely ground black pepper
  • 1/4 tsp finely ground sea salt
  • 1/4 tsp garlic powder
  • 1/4 tsp crushed red pepper flakes

Combine All Ingredients

Combine all ingredients in a mixing bowl and mix until fully combined.

Expect the dip to be very thin, which is completely normal.

As it sits, the seasonings and dried tomatoes will absorb all moisture.

Cover and Refrigerate for at Least 4 Hours

Once mixed together, make sure to cover the bowl tightly with plastic wrap and refrigerate.

Letting the dip rest for 4 hours is what thickens it up as well as allowing all flavours to blend together.

Pair with Chips or Crackers

This dip works really well with naan crackers, pita chips, or corn chips, but you can also pair it with normal crackers.

You can also use this dip spread on top of a sandwich or for wrapping up sandwiches or subs.

If you want to be fancy, sprinkle freshly grated Parmesan cheese on top before serving or fold some in while mixing.

Sun-Dried Tomato Dip with Italian Seasoning

This dip takes ~10 minutes to mix up but needs at least 4 hours in the fridge to thicken and let the flavors develop. The sun-dried tomatoes soften up and the whole thing gets creamy and spreadable.
