Ingredients (~24 cookies)
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup light brown sugar, packed
- 3/4 cup granulated sugar
- 2 large eggs, room temperature
- 1 large egg yolk, room temperature
- 1 tbsp vanilla extract
- 2 3/4 cups all-purpose flour
- 1 1/2 tsp baking soda
- 1 1/2 tsp fine sea salt
- 1 cup crushed kettle-cooked potato chips
- 1/2 cup walnut pieces
- 3/4 cup chopped bittersweet or semi-sweet chocolate
- 1/3 cup desiccated (unsweetened) coconut
Create the Dough
Heat your oven to 350°F.
Prepare two large cookie sheets with parchment paper.
Combine Ingredients
In a large bowl, mix the melted butter, brown sugar, and granulated sugar using a whisk until they blend together.
This will take about one minute.
To the mixture, add the eggs, egg yolk, and vanilla.
Mix until the mixture is well blended.
The Next Step
In a separate bowl, mix the flour, baking soda, and salt using a whisk.
Fold the dry ingredients into the wet mixture using a rubber spatula.
You should still see a small amount of dry flour in the mixture at this stage.
Next, add the crushed potato chips, walnut pieces, chopped chocolate, and coconut.
Gently fold all these ingredients together until well blended.
Now that the dough has been mixed and all dry flour has been incorporated into the dough, set it aside to firm up for approximately 10 minutes.
Bake the Cookies
Scoop out about three tablespoons of dough and place onto the prepared baking sheets with a minimum of 2 inches between each one.
Place one tray into the oven at a time.
Bake for about eight to ten minutes until the edges of the cookies are a light golden brown colour, and the centre of the cookie looks still soft and fluffy.
If desired, when they come out of the oven, place on top of the cookies a few more crushed potato chips, chocolate chunks, and walnut pieces for an extra touch.
Allow the cookies to cool on the baking sheet using a cooling rack.
